Recipes for Fuchu Dai Ichi Baking
(Parents - if you have a better recipe for either of these, feel free to use it and perhaps send us a copy. Thanks)

Cookie Recipe

1 cup margarine, softened
1/2 cup granulated sugar
1/2 cup packed light brown sugar
1 egg
1 teaspoon vanilla extract
3 cups all-purpose flour
1 teaspoon baking soda

In a large bowl, with an electric mixer, beat margarine with sugars until light and fluffy. Beat in egg and vanilla until smooth.  Combine flour with baking soda.  Gradually add to margarine mixture, blending well after each addition.  Chill at least two hours.

Preheat oven to 375 degrees F. On a lightly floured board, roll dough out to be 1/8 inch thick.  Cut or stamp "round" pumpkin shapes.  Place the cookies on lightly greased cookie sheets, baking 8 - 9 minutes (depending on your oven.) Cool completely on wire racks.  Send in the cookies in a container with your name on it, or use a sturdy cardboard container that could be thrown out.
 

Frosting Recipe
 
(Note this will be used for approx. 30 cookies, so a double batch is needed.)

3 tablespoons of butter or margarine
2 cups confectioner's sugar
1 teaspoon vanilla extract
2-3 tablespoons milk
2-4 drops of food coloring. ( to make orange combine yellow and red using more yellow than red.)

In a small saucepan over low heat, melt butter. (This can also be done in a microwave.)  Remove from heat, blend in sugar and vanilla.  Add milk gradually, beating with a spoon or wire whisk until the frosting is the desired spreadable consistency. Add in the food coloring. Store in an air tight container.  This makes about 1 cup of frosting.
